Chocolate chip cookies with raisins/oatmeal/hazelnuts


I am thrilled to set up a food blog displaying the sweet bakes made by me. I always get very impressed by the effort put in by the food bloggers in presenting their 'artwork'. At the same time, I am very thankful that great recipes are shared online with photos attached. To date, I only know how to bake cheesecake (baked or chilled), chocolate chip cookies and brownies. I hope to try more baking recipes in the near future.

Tired of baking just the usual chocolate chip cookies, I decided to bake chocolate chips with raisin and oatmeal ones, and chocolate chip and hazelnut nuts ones. I used the recipe for drop cookies from Martha Steward's Cooking School. I followed through all the steps except that I made some slight modifications to the amount of brown sugar used. I will post the recipe online soon.

Recipe for drop cookies-

3 cups all-purpose flour ( I used self-raising flour)
1 1/2 teaspoons coarse salt
1 3/4 teaspoons baking soda ( not needed since self-raising flour is used)
1 cup (2 sticks) unsalted butter, room temperature ( I used Lurpak unsalted butter)
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
2 cups desired add-ins (semisweet chocolate chips, hazelnut, walnuts, raisins or chopped pecan nuts)



Steps:

1 .Pre-heat oven to 180C.
2. In a bowl, whisk together the flour and salt.
3. Place butter and both sugars in a mixing bowl and whisk them until the mixture is light and fluffy. Add one egg at a time and beating until thoroughly incorporated after each addition. Stir in vanilla.
4. Add the dry ingredients in 3 additions to (3), stirring until completely blended. Stir in desired add-ins. (Or, if making a few types of cookies, split the cookie dough into equal parts and then stir in the sufficient amount of add-ins.)
5. Using a melon baller scoop, drop the cookie dough onto the baking sheets, abt 2 1/2 inches apart. Bake until golden brown at edges and center set in for 13-15minutes.
6. Let cool on sheets for 5 mins and transfer to wire rack to cool completely.

thanks for the great recipe for the cookies. I tried it for the very first time and it tasted delicious.(of cos i wouldnt be able to do it without your help during my baking process:P) my friends and students love it! will definately try out the other recipes like the brownies and cheesecake! :):)
